Ingredients:
8 slices of rye bread
1 pound thinly sliced corned beef
1 cup sauerkraut, well-drained
8 slices Swiss cheese
½ cup Thousand Island dressing
Butter, softened (for spreading)
Instructions:
Preheat a skillet or griddle over medium heat.
Lay out the slices of rye bread and spread a thin layer of Thousand Island dressing on each slice.
Divide the corned beef into 4 equal portions and layer one portion on top of the dressing on 4 slices of bread.
Next, divide the sauerkraut into 4 portions and squeeze out any excess moisture. Place one portion of sauerkraut on top of the corned beef on each sandwich.
Layer two slices of Swiss cheese on top of the sauerkraut on each sandwich.
Take the remaining 4 slices of bread and spread a thin layer of Thousand Island dressing on one side of each slice.
Place the bread slices with the dressing side down on top of the Swiss cheese to form sandwiches.
Spread a thin layer of softened butter on the outsides of the sandwiches.
Carefully place the sandwiches on the preheated skillet or griddle. Cook for 3-4 minutes on each side, or until the bread is toasted and the cheese is melted.
Once cooked, remove the sandwiches from the skillet and let them cool slightly before cutting them in half.
Serve the Reuben Sandwiches hot and enjoy the delicious combination of flavors.
Tips:
If you prefer a lighter version, you can use turkey or pastrami instead of corned beef.
To intensify the flavor, you can lightly toast the rye bread slices before assembling the sandwiches.
For added crunch, you can add a layer of thinly sliced dill pickles or pickle relish to the sandwiches.
Serve the Reuben Sandwiches with a side of coleslaw, pickles, or potato chips for a complete meal.
Indulge in the classic flavors of the Reuben Sandwich, a perfect dish to celebrate St. Patrick’s Day or enjoy anytime you crave a hearty and satisfying meal. With its layers of savory ingredients and tangy dressing, this sandwich is sure to delight your taste buds.
