
Liver and Onions

Ingredients:
1 pound of beef or calf liver, sliced into thin pieces
2 large onions, thinly sliced
1/2 cup of all-purpose flour
1/4 cup of butter
2 tablespoons of vegetable oil
Salt and pepper to taste
Optional: fresh parsley for garnish
Instructions:
Rinse the liver slices under cold water and pat them dry with paper towels. Season the liver with salt and pepper on both sides.
Place the flour in a shallow dish and dredge each liver slice in the flour, shaking off any excess.
Heat a large skillet over medium-high heat and add the butter and vegetable oil. Allow the butter to melt and the oil to heat up.
Add the liver slices to the skillet, being careful not to overcrowd the pan. Cook the liver for about 2-3 minutes on each side, or until browned and cooked through. Remove the liver from the skillet and set it aside.
In the same skillet, add the thinly sliced onions. Cook the onions over medium heat, stirring occasionally, until they become golden brown and caramelized. This may take around 10-15 minutes.
Once the onions are caramelized, return the liver slices to the skillet, nestling them among the onions. Reduce the heat to low and let the liver and onions cook together for an additional 2-3 minutes, allowing the flavors to meld.
Transfer the liver and onions to a serving platter. Garnish with fresh parsley if desired.
Serve the Liver and Onions hot with your choice of sides, such as mashed potatoes, steamed vegetables, or a green salad.
Note: Liver is best cooked until it is still slightly pink in the center for optimal tenderness. Overcooking can result in a tough texture.
