Ingredients:
For the dough:
2 cups of all-purpose flour
1/2 teaspoon of salt
1/2 cup of cold unsalted butter, cut into small cubes
1/4 cup of cold water
For the filling:
2 cups of your favorite fruit, such as apples, peaches, or cherries, peeled and diced
1/4 cup of granulated sugar
1 tablespoon of cornstarch
1/2 teaspoon of ground cinnamon
Oil for frying
Powdered sugar for dusting (optional)
Instructions:
In a large mixing bowl, whisk together the flour and salt. Add the cold cubed butter to the bowl. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
Gradually add the cold water to the flour mixture, a little at a time, and mix until the dough comes together. Be careful not to overmix. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
While the dough is chilling, prepare the filling. In a saucepan, combine the diced fruit, granulated sugar, cornstarch, and ground cinnamon. Cook over medium heat, stirring occasionally, until the fruit softens and the mixture thickens. Remove from heat and let it cool completely.
Take the chilled dough out of the refrigerator. On a floured surface, roll out the dough to about 1/8 inch thickness. Cut out circles, approximately 4-5 inches in diameter, using a cookie cutter or a round object like a bowl.
Spoon a tablespoon of the fruit filling onto one side of each dough circle. Fold the other half of the dough over the filling, creating a half-moon shape. Press the edges together with a fork to seal the pie.
Heat oil in a deep skillet or frying pan over medium heat. Carefully place the pies into the hot oil, cooking them in batches. Fry the pies until they turn golden brown on both sides, approximately 2-3 minutes per side. Use a slotted spoon to remove the pies from the oil and place them on a paper towel-lined plate to drain excess oil.
Allow the fried pies to cool slightly before serving. Dust with powdered sugar if desired.
