1 cup stone-ground grits
4 cups water
Salt to taste
4 ounces cream cheese, softened
4 tablespoons unsalted butter
1/2 cup shredded cheddar cheese
1/4 cup milk
Optional toppings: crispy bacon, sliced green onions, hot sauce
In a medium-sized saucepan, bring the water to a boil. Add salt to taste.
Gradually whisk in the grits, ensuring there are no lumps. Reduce the heat to low and cover the saucepan.
Allow the grits to simmer for about 20-25 minutes, stirring occasionally to prevent sticking.
Once the grits have thickened to a creamy consistency, add the softened cream cheese and butter. Stir until they are fully melted and incorporated.
Add the shredded cheddar cheese to the mixture, stirring until it is melted and well combined.
Pour in the milk and continue stirring until the grits reach your desired consistency. If they become too thick, you can add more milk as needed.
Taste and adjust the seasoning with salt if necessary.
Remove the saucepan from the heat and let the cream cheese grits sit for a few minutes to thicken.
Serve the cream cheese grits hot in bowls, topped with optional toppings such as crispy bacon, sliced green onions, or a dash of hot sauce.
Use stone-ground grits for the best texture and flavor.
Experiment with different types of cheese for variations in taste. You can try adding Monterey Jack, Parmesan, or even a spicy pepper jack cheese.
For a richer flavor, substitute some or all of the water with chicken or vegetable broth.
Adjust the consistency of the grits by adding more or less milk to achieve your desired thickness.
Now you’re ready to enjoy a comforting bowl of Cream Cheese Grits as a versatile and delicious dish!
