Ingredients:

2 tablespoons butter
1 onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
2 medium potatoes, peeled and diced
4 cups chicken broth
2 cups cooked chicken, shredded or diced
2 cups corn kernels (fresh or frozen)
1 cup heavy cream
1 teaspoon dried thyme
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)

Instructions:

In a large pot or Dutch oven, melt the butter over medium heat.

Add the diced onion and minced garlic to the pot and sauté until the onion becomes translucent.

Stir in the diced carrots, celery, and potatoes. Cook for about 5 minutes, allowing the vegetables to soften slightly.

Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for 15-20 minutes, or until the potatoes are tender.

Add the cooked chicken and corn kernels to the pot. Stir well to combine.

Pour in the heavy cream and sprinkle in the dried thyme. Stir again to incorporate all the ingredients.

Season the chowder with salt and pepper to taste. Adjust the seasoning as desired.

Simmer the chowder for another 10 minutes, allowing the flavors to meld together.

Remove the pot from the heat and let it cool slightly.

Ladle the Chicken Corn Chowder into serving bowls and garnish with freshly chopped parsley.

Serve hot and enjoy the creamy and comforting flavors of this hearty soup.

Tips:

For an extra kick of flavor, you can add cooked and crumbled bacon or a pinch of smoked paprika to the chowder.
Feel free to add other vegetables such as peas or diced bell peppers for added texture and taste.
If you prefer a thicker chowder, you can mix cornstarch with a small amount of cold water and add it to the simmering soup, stirring until thickened.
Leftover chowder can be stored in the refrigerator for up to 3 days. Reheat gently on the stovetop, adding a splash of broth or cream if needed to adjust the consistency.
Enjoy the comforting and creamy goodness of Chicken Corn Chowder, a perfect dish to warm you up and satisfy your taste buds. This flavorful soup is sure to become a favorite in your household, bringing comfort and joy with every spoonful.
