Ingredients:

1 pound of beef stew meat, cubed
1 onion, diced
3 carrots, sliced
3 celery stalks, diced
2 potatoes, peeled and diced
1 cup of frozen corn
1 cup of frozen peas
4 cups of beef broth
2 cups of water
1 can (14 ounces) of diced tomatoes
2 bay leaves
1 teaspoon of dried thyme
Salt and pepper to taste


Instructions:

Heat a large pot over medium heat and add the beef stew meat. Cook until browned on all sides. Remove the meat from the pot and set it aside.

In the same pot, add the diced onion and sauté until translucent. Then add the carrots, celery, and potatoes. Cook for about 5 minutes, stirring occasionally.

Return the browned beef stew meat to the pot. Add the frozen corn, frozen peas, beef broth, water, diced tomatoes (with their juice), bay leaves, dried thyme, salt, and pepper. Stir well to combine.

Bring the soup to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1 to 2 hours, or until the meat is tender and the flavors have melded together.

Remove the bay leaves from the soup and taste for seasoning. Adjust the salt and pepper if needed.

Serve the Amish Farm Soup hot with crusty bread or homemade cornbread.

Note: This soup can be stored in the refrigerator for up to 3 days. The flavors will continue to develop, making it even more delicious the next day.
