Ingredients:

4 cups yellow squash, sliced
1 small onion, diced
2 cloves garlic, minced
1/4 cup butter
2 eggs, beaten
1/2 cup mayonnaise
1/2 cup sour cream
1 cup shredded cheddar cheese
1 cup crushed butter crackers
Salt and black pepper to taste
Instructions:

Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
In a large skillet, melt the butter over medium heat. Add the sliced squash, diced onion, and minced garlic. Cook until the squash is tender, about 8-10 minutes. Remove from heat and let it cool slightly.
In a mixing bowl, combine the beaten eggs, mayonnaise, sour cream, shredded cheddar cheese, salt, and black pepper. Mix well.
Add the cooked squash mixture to the bowl and gently fold it into the egg mixture until evenly combined.
Transfer the squash mixture to the greased baking dish and spread it out evenly.
In a separate bowl, mix together the crushed butter crackers with a little melted butter until well coated.
Sprinkle the buttered cracker crumbs over the top of the casserole.
Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
Remove from the oven and let it cool for a few minutes before serving.

Tips:

You can use a combination of yellow squash and zucchini for added variety.
Feel free to add other seasonings or herbs such as thyme or parsley to enhance the flavor.
If you prefer a spicier kick, you can add a dash of cayenne pepper or some diced jalapenos to the casserole.
Serve the Squash Alabama Casserole as a side dish with grilled meats or as a vegetarian main course.
Enjoy the creamy, cheesy goodness of Squash Alabama Casserole, a delightful Southern-inspired dish that will surely become a family favorite!
