Ingredients:
2 pounds of potatoes (preferably russet or Yukon Gold), peeled and cut into bite-sized cubes
4 hard-boiled eggs, peeled and chopped
1/2 cup of mayonnaise
2 tablespoons of Dijon mustard
1 tablespoon of apple cider vinegar
1/2 cup of diced celery
1/4 cup of diced red onion
1/4 cup of diced dill pickles
Salt and pepper to taste
Optional: chopped fresh parsley for garnish
Instructions:
Place the cubed potatoes in a large pot and cover them with cold water. Add a pinch of salt to the water. Bring the water to a boil over medium-high heat and cook the potatoes until they are fork-tender. This usually takes about 10-12 minutes. Drain the cooked potatoes and set them aside to cool.
In a small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Adjust the seasonings to suit your taste preferences.
