Ingredients:
4 pork loin chops
Salt and pepper to taste
2 tablespoons olive oil
1 onion, diced
2 cloves of garlic, minced
2 zucchini, sliced
2 yellow squash, sliced
1 red bell pepper, sliced
1 can diced tomatoes
1 cup chicken broth
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon paprika
Fresh parsley for garnish
Instructions:
Season the pork loin chops with salt and pepper on both sides.
Heat the olive oil in a large skillet over medium-high heat. Add the pork chops to the skillet and cook for 3-4 minutes on each side, until browned. Remove the chops from the skillet and set them aside.
In the same skillet, add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
