4 pork loin chops
Salt and pepper to taste
2 tablespoons olive oil
1 onion, diced
2 cloves of garlic, minced
2 zucchini, sliced
2 yellow squash, sliced
1 red bell pepper, sliced
1 can diced tomatoes
1 cup chicken broth
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon paprika
Fresh parsley for garnish

Season the pork loin chops with salt and pepper on both sides.

Heat the olive oil in a large skillet over medium-high heat. Add the pork chops to the skillet and cook for 3-4 minutes on each side, until browned. Remove the chops from the skillet and set them aside.

In the same skillet, add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant.

Add the sliced zucchini, yellow squash, and red bell pepper to the skillet. Cook for 5-6 minutes, stirring occasionally, until the vegetables start to soften.

Pour in the diced tomatoes and chicken broth. Stir in the dried thyme, dried oregano, and paprika. Season with additional salt and pepper to taste.

Return the pork chops to the skillet, nestling them among the vegetables. Cover the skillet with a lid and reduce the heat to low. Let the stew simmer for about 20-25 minutes, or until the pork chops are cooked through and tender.

Remove the lid and give the stew a gentle stir. Allow it to simmer uncovered for an additional 5 minutes to thicken the sauce slightly.

Garnish with fresh parsley before serving.

These Pork Loin Chops Stewed Squash are a delightful combination of tender pork chops and flavorful vegetables. The stewed squash adds a comforting touch to the dish, making it perfect for a satisfying meal. Enjoy the blend of spices and the richness of the sauce as you savor each bite. Bon appétit!
