Ingredients:
2 pounds mixed mustard and turnip greens
4 slices bacon, diced
1 medium onion, finely chopped
3 cloves garlic, minced
1 teaspoon red pepper flakes (optional)
2 cups chicken or vegetable broth
1 tablespoon apple cider vinegar
Salt and black pepper to taste
Instructions:
Start by cleaning the greens thoroughly. Remove any tough stems and tear the leaves into bite-sized pieces. Rinse them well under cold water and drain.
In a large pot or Dutch oven, cook the diced bacon over medium heat until it turns crispy and releases its fat.
Add the chopped onion to the pot and sauté until it becomes translucent, about 5 minutes. Stir in the minced garlic and red pepper flakes, if using, and cook for another minute.
Add the cleaned greens to the pot, along with the chicken or vegetable broth. Stir well to combine everything.
Cover the pot and let the greens cook over medium-low heat for about 30-40 minutes, or until they become tender. Stir occasionally.
Once the greens are cooked to your desired tenderness, stir in the apple cider vinegar. Season with salt and black pepper to taste.
Continue cooking the greens uncovered for another 5 minutes to allow the flavors to meld together.
Remove the pot from heat and let the greens rest for a few minutes before serving.
Serve the Mustard and Turnip Greens as a side dish, accompanied by cornbread or rice, if desired.
Tips:
Feel free to adjust the amount of red pepper flakes based on your preferred level of spiciness.
For a vegetarian or vegan version, omit the bacon and use vegetable broth instead of chicken broth.
You can add additional seasonings like smoked paprika or a splash of hot sauce to enhance the flavor profile.
Now you’re ready to enjoy a delicious plate of Mustard and Turnip Greens!
