2 tablespoons butter
1 onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced

4 cups chicken broth
2 cups cooked chicken, shredded or diced

1 cup heavy cream
1 teaspoon dried thyme
Salt and pepper, to taste
