
Blueberry and Pecan Pancakes

Ingredients:
1 1/2 cups all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
1/2 cup milk
2 large eggs
2 tablespoons unsalted butter, melted
1 cup fresh blueberries
1/2 cup chopped pecans
Maple syrup and additional blueberries for serving
Instructions:
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together the buttermilk, milk, eggs, and melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are fine.
Gently fold in the fresh blueberries and chopped pecans into the pancake batter.
Heat a griddle or non-stick skillet over medium heat. Lightly grease with butter or cooking spray.
Pour 1/4 cup of the pancake batter onto the griddle for each pancake.
Cook until bubbles form on the surface of the pancakes and the edges start to set, then flip and cook for another 1-2 minutes, or until golden brown.
