Ingredients:

2 pounds of beef chuck, cut into 1-inch cubes
2 tablespoons of vegetable oil
1 large onion, diced
3 cloves of garlic, minced
4 carrots, peeled and sliced
3 celery stalks, sliced
2 potatoes, peeled and cubed
1 cup of frozen peas
4 cups of beef broth
1 cup of red wine (optional)
2 tablespoons of tomato paste
1 bay leaf
1 teaspoon of dried thyme
Salt and pepper to taste


Instructions:

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.

Season the beef cubes with salt and pepper. Brown the beef in the hot oil until all sides are nicely seared. This will enhance the flavor of the stew. Remove the beef from the pot and set it aside.

In the same pot, add the diced onions and minced garlic. Sauté until the onions become translucent and the garlic becomes fragrant.

Add the carrots, celery, and potatoes to the pot. Stir and cook for about 5 minutes to slightly soften the vegetables.

Return the beef to the pot and pour in the beef broth. If using, add the red wine for extra depth of flavor.

Stir in the tomato paste, bay leaf, and dried thyme. These ingredients will give the stew a robust taste.

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 1.5 to 2 hours, or until the beef is tender.

During the last 15 minutes of cooking, add the frozen peas to the pot. This will add a pop of color and freshness to the stew.

Once the beef is tender and the vegetables are cooked through, remove the bay leaf and discard it.
